These days, avoiding zucchini noodles-or zoodles- is almost impossible. Your favorite Italian restaurant offers them as an alternative to spaghetti. Your neighbor somehow eats them with every meal. Veggie noodles seems to have just appeared out of nowhere, and now it is threatening to take over the eating experience. To spiralize or not to spiralize?

Truth be told, zucchini “pasta” has been around for quite some time. The New York Times even profiled it back in 2008. Nonetheless, it is accurate to think that these noodles have only become a trend fairly recently. In the past five years, Google searches for “zucchini noodles” have steadily risen, peaking sometime in late 2018, early 2019.

One of the early adopters of these spiralized noodles is Davida Lederle (also known as The Healthy Maven). Davida discovered a healthy recipe for zucchini noodles back in 2016, when the health-conscious alternative to gluten-free pasta was still obscure. With the help of her friend and fellow blogger, Amie Valpone, Davida showed that you don’t need to eat out in order to have the zucchini experience and this can be made in your own kitchen!

Amie came up with a unique twist to this genre with a light, refreshing salad recipe that can be prepared in under 10 minutes. These are NOT your mama’s zoodles!
